Let’s be honest, an important part of every wedding registry process is picking out the KitchenAid mixer color… and then you just wait, knowing that it is somewhat of a stretch that you would actually receive such a gift. Well, this week, after a long, boring, rainy day at work, we came home to a large box containing the most beautiful cobalt blue mixer you have ever seen. (It looks so much better at home than in the store – thank you Reeds!)
Like a pair of leather boots, a KitchenAid needs some good breaking in. So, after a good hard Saturday workout, Leah and I decided to “break her in” (she’s a girl!). Here was the result:
The first one is pretty simple – the good ole fall flavor of pumpkin mashed up in bread, divided into mini muffins and topped with chocolate. It’s hard to go wrong with pumpkin bread.
Leah made sugar cookies and as much as I love icing, I have to say that a good sugar cookie stands alone. A good discovery is to only let the edges of the cookies get hard. The middle sinks just a little, but they are much more delicious this way!
And last, but definitely not least, is the chocolate cake that I know only to refer to as “the Furman girlfriends chocolate cake.” Many a night in college and every reunion weekend since college, our group of FU girlfriends has taken down this cake as fast at you can say “FU all the time.” I overcooked it a little this time – I think it’s definitely a cake you want “soft.” Another key might be a little extra oil 😉
Thank you, Lindsay Torres, for reuniting me with the recipe recently – I can’t wait until we are all together eating this cake again!
