We are thankful for:
– “Doubling” our family size this year – WORK! (for good and for bad) – Health; bodies that get us around – a gym membership – a kitchen to cook and bake in – ONE Saturday in Tennessee with no rain – every ray of sun that comes out in our Seattle winter – friends who love to dance – bookshelf full of books – our road bikes – heaters – Phinney ridge; our fun new neighborhood – neighbors who are expecting! – Trader Joe’s – snowboards waiting to be used
We made for Thanksgiving:
Pumpkin Roll! This one is easy and although we don’t have a jelly roll pan, we made do. The flavors of pumpkin and cream cheese icing are so festive!
And finally, last but not least, we had to make the Cook family angel rolls. These are a staple of every holiday meal that my aunt Karen usually makes in mass. Every holiday I am away from E. TN, I have to at least attempt to make these rolls and feel at home. While mine have never come close to being at good as Karen’s, I will keep trying!
