In college I had the opportunity to study and travel in the beautiful country of Chile. Being my first time to travel abroad, I purchased an exorbitant amount of breakable souvenirs including a large stack of beautiful clay bowls… 1 of them made it to the United States intact.
Thankfully, someone got us a Chilean baking dish that came with recipes for several of my favorite native dishes (if you want to buy one, click here). Last week Tim decided that the time had come to put our frog dish to work, so we made Pastel de Choclo (note: this is not for our vegetarian friends). Here is the simple version of a dish that will give you a nice taste of Chile:
Bake on 450 for about 30 minutes and then sprinkle a couple tablespoons of sugar on top! You heard me, sugar!
I admit this is a pretty brief attempt at a recipe, but it gives you an idea of the dish. The flavors really all come together, believe it or not, and I would encourage you to look up a Pastel de Choclo recipe for the missing links and give it a try (you don’t have to own the awesome frog dish).
